Broccoli, Apple and Walnut Salad



1 cup avocado mayonnaise

2 Tbsp. lemon juice

1 garlic clove, minced

1 tsp. raw honey (optional)

Sea salt

Freshly ground pepper


2 medium heads of broccoli chopped

1 large carrot, grated (optional)

1 apple, cored and finely chopped

¼ cup onion, finely chopped

½ cup walnuts, coarsely chopped

¼ cup dried cranberries


  1. In a bowl, combine all ingredients for the dressing. Mix well and season to taste.
  2. In a large bowl, combine all salad ingredients and toss gently.
  3. Mix in as much dressing as you like and toss until well combined.
  4. Serve right away or refrigerate before serving.
