Ingredients
10 slices Bacon
1 head Cauliflower (large, chopped into bite-size pieces)
1 tsp Sea Salt
4 stalks Green Onion (chopped)
2 tsps Thyme (fresh)
Instructions
Preheat the oven to 400ºF (205ºC).
Arrange the bacon on a large rimmed baking sheet and bake for 10 to 15 minutes, or until crispy. Remove the bacon, leaving half of the fat on the pan. Let it cool slightly and chop.
Spread the cauliflower on the pan. Sprinkle with sea salt and toss to coat with bacon fat. Cook the cauliflower in the oven for 18 to 20 minutes, or until edges are golden brown.
Remove the pan from the oven. Add the green onion, thyme, and chopped bacon and gently mix. Cook in the oven for five more minutes. Divide evenly between plates and enjoy.
